Ingredients:
- 1 cup split Bengal gram (chana dal), washed and soaked for a few hours
- 500 grams ground meat (beef or lamb)
- 1 large onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- Salt to taste
- 2 tablespoons chopped fresh coriander
- 2 tablespoons chopped fresh mint leaves
- 1 egg (optional, for binding)
- Oil for frying
Instructions:
Boil Chana Dal:
- In a pot, add soaked chana dal with enough water. Cook until the dal is tender. Drain any excess water.
Prepare Meat Mixture:
- In a large mixing bowl, combine the cooked chana dal, ground meat, chopped onion, green chilies, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, salt, fresh coriander, and mint leaves.
Blend the Mixture:
- Transfer the mixture to a food processor and blend until you get a smooth consistency. This helps in achieving a better texture for the kebabs.
Check Consistency:
- If the mixture is too loose, you can add an egg to bind it. Mix well.
Shape into Kebabs:
- Shape a small portion of the mixture into a round or oval patty.
Fry the Kebabs:
- Heat oil in a pan over medium heat. Once the oil is hot, place the kebabs in the pan and fry until they are golden brown on both sides.
Drain and Serve:
- Remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.
Serve:
- Serve the Shami Kebabs hot with mint chutney or your favorite sauce.
