{usually beef or lamb} and lentils, along with various spices. Here's a basic recipe for making

Shami kebab .......

Ingredients:

  • 1 cup split Bengal gram (chana dal), washed and soaked for a few hours
  • 500 grams ground meat (beef or lamb)
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • Salt to taste
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons chopped fresh mint leaves
  • 1 egg (optional, for binding)
  • Oil for frying

Instructions:

  1. Boil Chana Dal:

    • In a pot, add soaked chana dal with enough water. Cook until the dal is tender. Drain any excess water.

  2. Prepare Meat Mixture:

    • In a large mixing bowl, combine the cooked chana dal, ground meat, chopped onion, green chilies, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, salt, fresh coriander, and mint leaves.

  3. Blend the Mixture:

    • Transfer the mixture to a food processor and blend until you get a smooth consistency. This helps in achieving a better texture for the kebabs.

  4. Check Consistency:

    • If the mixture is too loose, you can add an egg to bind it. Mix well.

  5. Shape into Kebabs:

    • Shape a small portion of the mixture into a round or oval patty.

  6. Fry the Kebabs:

    • Heat oil in a pan over medium heat. Once the oil is hot, place the kebabs in the pan and fry until they are golden brown on both sides.

  7. Drain and Serve:

    • Remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.

  8. Serve:

    • Serve the Shami Kebabs hot with mint chutney or your favorite sauce.

You can also serve Shami Kebabs with naan or as a side dish with rice. Enjoy your delicious homemade Shami Kebabs!
