Ingredients:
- 2 tablespoons of olive oil
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 (28-ounce) can of crushed tomatoes
- 1 (14-ounce) can of diced tomatoes
- 1 teaspoon of sugar
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
- Red pepper flakes (optional, for a bit of heat)
- Fresh basil leaves (for garnish)
- Grated Parmesan cheese (for serving)
- 1-2 pounds of cooked pasta (spaghetti, fettuccine, or your choice)
Instructions:
In a large saucepan, heat the olive oil over medium heat.
Add the chopped onions and garlic and sauté until they become translucent and fragrant, but not browned, for about 5 minutes.
Add the crushed tomatoes and diced tomatoes to the saucepan, along with the sugar, dried oregano, dried basil, and a pinch of salt and pepper.
If you like a bit of heat, you can also add red pepper flakes at this stage.
Stir everything well and bring the sauce to a gentle simmer. Reduce the heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally.
This will allow the flavors to meld and the sauce to thicken.
Taste the sauce and adjust the seasoning with more salt and pepper if needed. You can also add more dried herbs if you desire a stronger flavor.
While the sauce is simmering, cook your pasta according to the package instructions until it's al dente.
Once the sauce has thickened to your liking, remove it from the heat.
Serve the sugo sauce over the cooked pasta and garnish with fresh basil leaves. You can also top it with grated Parmesan cheese for extra flavor.
Enjoy your homemade sugo sauce with pasta! This sauce is also excellent as a base for other Italian dishes like lasagna or as a topping for meatballs.
- Feel free to customize this sugo recipe to your taste by adding ingredients like red wine, ground meat (such as beef or pork), or fresh herbs for extra complexity and depth of flavor.
