Here's a quick and easy pancake recipe:
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or substitute with regular milk and a little vinegar or lemon juice)
- 1 egg
- 2 tablespoons melted butter
- Cooking spray or extra butter for the pan
Instructions:
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are a few lumps.
Preheat a non-stick skillet or griddle over medium-high heat and lightly grease it with cooking spray or a small amount of butter.
For each pancake, pour about 1/4 cup of batter onto the hot skillet. Cook until you see bubbles forming on the surface, then flip the pancake and cook for another 1-2 minutes or until golden brown.
Remove the pancake from the skillet and keep warm. Repeat with the remaining batter.
Serve the pancakes with your favorite toppings, such as maple syrup, fresh fruit, whipped cream, or chocolate chips.
Enjoy your quick and delicious homemade pancakes!
